In the vineyard...

The vine is grown without chemicals, pesticides or insecticides. The first objective is to structure the soil and activate life within it in order to create a balance between the plant and its soil. We use prophylaxis which ventilates the fruiting zone and the foliage; in this way, we limit cryptogamic threats and obtain more balance.

In the cellar...

After manual harvesting and careful sorting carried out by the harvesters, the vinification is made with grapes in bunches and destalked , with native yeasts (no use of commercial yeasts or enzymes) and in concrete vats. The wine is extracted after its malo-lactic fermentation and is then refined in concrete vats for about 1 year. Gravity is then used for bottling.
