The vine is grown without chemicals, pesticides or insecticides. The first objective is to structure the soil and activate life within it in order to create a balance between the plant and its soil. We use prophylaxis which ventilates the fruiting zone and the foliage; in this way, we limit cryptogamic threats and obtain more balance.
After a manual harvest and careful sorting by the harvesters, the vinification is made with grapes in bunches and destalked , with native yeasts, in concrete vats. The wine is racked after alcoholic fermentation in order to engage its malo-lactic in 20 hL foudres. Ageing lasts about a year and a half.
