The vine is grown without chemicals, pesticides or insecticides. The first objective is to structure the soil and activate life within it in order to create a balance between the plant and its soil. We use prophylaxis which ventilates the fruiting zone and the foliage; in this way, we limit cryptogamic threats and obtain more balance.
After manual harvesting and careful sorting carried out by the harvesters, the vinification is made with grapesi n bunches and destalked , with native yeasts (no use of commercial yeasts or enzymes) and in concrete vats. The wine is extracted after its malo-lactic fermentation and is then refined in concrete vats for about 1 year. Gravity is then used for bottling.
